A box full of smoke: Long a common practice at American barbecues, and rapidly gaining popularity here in Europe: smoking fish or meat. The two-part stainless steel box, consisting of a smoking bowl and lid, holds up to 750 ml and imparts an aromatic smoky flavor to the food. To do this, simply place a handful of commercially available wood chips (available in a variety of flavors) into the smoking box. Then simply close the lid and place it on the hot coals or gas burner. The longer the box stays on the grill, the more intense the smoky flavor.
